A powdered dough conditioner which at a 1-1.5% addition rate is a perfect way to improve water uptake, loaf volume, crumb structure and shelf life of baked yeast–raised products. This conditioner builds tolerance in doughs made from weaker flours and speeds up the rate of dough fermentation, allowing a shorter production process.
A powdered dough conditioner which can be added to Snowbird Golden Flakes at a 10% addition rate to improve the water uptake, loaf volume, crumb structure and shelf life of the baked loaves. The addition of this dough conditioner will speed up the rate of dough fermentation, allowing a shorter production process. This dough conditioner can also be added at levels of 1-3% to improve the baking performance of multigrain or rye bread formulations.
